The food area at Terrapolis will be a true meeting space. Here you’ll find the kitchens of Baak, Il Fungo Eclettico, Piazza Martino, and Casa nel Bosco, alongside stalls hosted by local producers — some of whom are part of the GAStiglione Solidarity Purchasing Group — and Caos Wine, a small artisan wine producer.
Starting Friday evening, you’ll also be able to enjoy festival-specific menus created by Spizzihi e Bocconi — offering gluten-free and vegan options — and Osteria La Portaccia, with vegetarian dishes available.
We look forward to sharing these three days with you, where food will also be about community and connection.

Da Baak anche mangiare sarà un’avventura dentro di te! Offriamo solo piatti vegetariani e vegani che utilizzano materie prime selezionate. Ogni ricetta punta a raggiungere l’ambito “zero-waste”! Le ricette che troverete al Festival sono realizzate con i funghi stagionali del Fungo eclettico. Noi crediamo che i funghi siano una valida alternativa sostenibile alla carne e agli allevamenti animali.
IL FUNGO ECLETTICO
In the heart of the city, we grow extraordinary mushrooms—delicious and rich in nutrients—by using what others discard.
Our project is born from a simple idea: turning food waste into precious resources, creating a virtuous ecosystem where nothing is wasted.
– We use local by-products like spent beer grains, olive pits, and coffee husks to nourish our mushrooms
– We grow locally, right in the city, reducing transport and emissions
– We cultivate intelligently and seasonally, choosing lesser-known varieties and offering ultra-fresh products
– We optimize every square meter with minimal water and energy consumption
We collaborate with local businesses to create a shared value network. Our mushrooms not only feed, but generate new cycles: the production waste becomes fertilizer or biomaterials, closing the sustainability loop.
PIAZZA MARTINO
The farm is located in Valsamoggia, in the Bolognese hills. For over twenty years, it has been fully organic. Initially privately owned, it was later acquired by two social cooperatives: Piazza Grande and Martin Pescatore. That’s where the name Piazza Martino comes from (we admit, we weren’t very creative—but it sounded nice). After a short experience in the cooperative world, I bought the farm myself, becoming, just before turning forty, a “young farmer” (that’s what the law says—even if I’m not that young anymore). Today, Piazza Martino is the brand of Azienda Agricola Tortelli Alessandro (that’s me!). Over the years, we’ve expanded the cultivated land to 4 hectares with 16 greenhouses, allowing us to grow vegetables all year round.
With the opening of our bistro in Via Serra, our team has grown: Camara and Silla handle the vegetable cultivation, while Letizia and Michele cook them in our kitchen lab. The two Andrea manage our shop on Via Serra.
CASA NEL BOSCO
Casa nel Bosco is a family-run farm in the heart of the Tuscan-Emilian Apennines, in the village of Baigno (Camugnano – BO), active since 2024.
It is located behind the Poranceto forest, surrounded by centuries-old chestnut trees and immersed in nature.
We grow in harmony with nature: no treatments, only sun, water, soil, and pure mountain air. Here, every vegetable tastes like it used to, and every harvest tells a story. We grow our seedlings from native seeds and respect their natural cycles.
CAOS WINE
Caotica was born from the idea of producing artisanal, natural, and sustainable wines, putting not only the vineyard but also people and the land at the center.
It’s a project that embraces sustainability in its broadest sense: environmental, economic, and social. Starting from a family vineyard and renting small plots—often abandoned or economically unmanageable—we directly involve the landowners in the production process. The goal is to give new life to forgotten vineyards, maintaining ties with those who cared for them in the past, so they can continue doing so using natural farming methods, in collaboration with us. Each vineyard is vinified separately to create a unique wine that reflects its identity. Caotica is more than a wine project: it’s a community journey, a restoration project, a way to care for the land and for relationships.
It’s a new, conscious way of making wine.
LOCAL PRODUCERS
Some local producers from the GAStiglione Solidarity Purchasing Group will also be present at the Festival, sharing their experiences. Specifically:
- Azienda Agricola Brunetti Franco – producers of ancient wheat, barley, white-flesh potatoes, and “marrone biondo” chestnuts
- Azienda Agricola Paola Nofri – vegetables, eggs, bread, pizza, and focaccia
- Katia del Quattro – organic beekeeping, honey, honeycomb, and propolis
During the day, there will also be traditional basket weaving demonstrations, along with an exhibition of Apennine artisanal knowledge and local wild herbs.
